Preliminary Data on the Ratio of D(–)-Lactate and L(+)-Lactate Levels in Various Lactic Acid Bacteria as Evaluated using an Enzymatic Method

This study evaluated the levels of D(–)-lactate and L(+)-lactate, ratio to total lactate (D(–)-lactate + L(+)-lactate) 15 lactic acid bacteria (LAB) using an enzymatic method. L(+)-lactate in LAB ranged from 0.31 13.9 mM 0.76 39.3 mM, respectively, Bifidobacterium sp.; 1.08 11.7 0.69–13.0 Lactobacillus 0.72 20.3 0.98 32.3 Leuconostoc sp., 33.0 39.2 Pediococcus acidilacti KCCM 11747. The range D(–)-lactic was 28.98%–45.76% 41.18%–61.02% 29.85%–42.36% 45.71% P. In future, there is a need test for various fermented products which different have been added screening used as probiotics that produce concentrations D(–)-lactate.

Supplementation of medium with diammonium hydrogen phosphate enhanced the D-lactate dehydrogenase levels leading to increased D-lactic acid productivity.
